Yum on the turkey and dressing. Our local supermarket has fresh rotisserie
turkey breast daily. I think about dressing every time I go by there.
After a trip to the Tennessee mountains, I had a craving for some good,
fattening Southern comfort food. I made smothered steak, mashed potatoes,
and fresh snap beans with little red potatoes.
I was feeling lazy, so I used a breading of flour with seasoned salt. I
breaded and browned 4 cubed steaks in a very small amount of oil, then
drained the oil. I added a cup of beef broth, threw in some onions sliced
into rings, covered and slow simmered for about 45 min. I removed the meat
and thickened the gravy with a cornstarch/water mixture. Surprisingly, the
cubed steak was very tender and tasty. Plenty of gravy for the potatoes.
I topped this off with homemade cornbread. Now all I have to do is learn
to eat grits and play the banjo :).
I ate at a friend's house recently and she served a dish of green beans
cooked with cranberries. It's a combo I never would have thought to cook
together. It was awesome!
Weather here: Thunderstorms, torrential rain, hot, hot, hot, with double
humidity. Absolutely miserable. The heat and humidity usually lasts until
January.
