Tomorrow is Sunday but Monday is a civic holiday in Ontario (and many
other places). We're having the "invite people" dinner tomorrow as
some have to work on the security for the visit of some scrub
vegetation guy, Brush, Maquis...didn't catch the name. I bought an
organic leg of lamb (again) and will do the slow (7 hour) roast.

Thanks, Victor, for all your help with this. This is no longer a
daunting task.
I vary the recipe to give it a North African flavour by covering the
meat with slices of lemon before creating the tent. I also add a
quarter cup of water at 3 and 5 hours to prevent drying out. This I do
through small perforations along the edges using a funnel.
With this, I plan to serve:
Corn on the cob as an opener
Cucumber salad
Small pan roasted potatoes (halved) in duck fat
various jellies (red pepper, mint)
Tomorrow, I will go to a local bakery and see if I can get a small
lemon tart, enough for six.
