What? No rice? :-)
A good way to served "baked" spuds is to slice them into fries,
hand-coat them lightly with a very small amount of oil, salt/pepper or
fajita spice them, then bake them.
aka: "Oven Fries".
Mom used to make these for us when we had marathon Dungeons and Dragons
sessions back when I was in college...
