Depends too on how long you are going to cook the meat. :-)
I personally leave the veggies almost intact. Carrots, cut in half,
small spuds left whole (or cut into halves or quarters for larger
potatoes), Medium sized onions, quartered.
I put them in at the beginning and let 'er rip!
One step dinner. ;-d Unless I am going to make gravy...
