What others think are just their personal opinions and preferences which
may be very different from your own. You have to decide if you want to
make a gazpacho-like concoction to your own specifications, or whether
you want to try an authentic Andalucía version. From what I gather,
traditional gazpacho andaluz versions nearly always include (stale)
bread and/or croutons. That is what you would encounter in most
traditionally-minded places in Spain. It is said that, originally,
gazpacho was based on ancient Roman concoction consisting of stale
bread, olive oil, vinegar and salt. Tomatoes, etc. came later.
