You need to temper the eggs- heat your liquid and then add a little
bit( like a tablespoon) at a time to the eggs, whisking all the time,
until you've added about half or two thirds of the liquid. Then add
that egg/liquid mixture back to your pan, and heat until desired temp
is reached.
